Sugar Crusted Lamb

- 4 lamb chops

-2 cups turbinado sugar

-1/4 cup fresh rosemary

-1 cup French mustard

-1/4 cup red wine vinegar

-zest of 1 lemon

- 1/4 cup olive oil

- 1 Yukon potato sliced length wise (about 1/4 inch thick)

Salt and pepper

Method:

Heat oven to 350. Pour sugar and rosemary into a plate evenly and set aside. Combine mustard, zest and red wine vinegar and coat lamb chops with the mixture. Then lightly press lamb chops into sugar mixture on each side. Toss potato sliced with oil and salt and pepper to taste. Evenly lay out oiled potato slices in a floral pattern underneath Lamb on a silicone mat or greased baking sheet.

Bake for 10 minutes or until desired cooked temp.
