Third Wheel Brewing opens today and head brewer Abbey Spencer is busy checking things off the list.
Abbey said, "We are all working a ton but real excited about getting doors open, getting people in here."
Third Wheel Brewing has been 2 years in the making and is the first brewery in St. Peters.
"It's kind of a respite away from your crazy lives," she said.
The facility is a total of 10,000 square feet.
"Massive. A lot of work and energy went into it but we're really proud of it. It's gorgeous," she said.
Third Wheel Brewing will have at least 4 beers on draft when they open today.
She said, "That'll slowly increase over time...we'll be adding more and more beers but hopefully 18 beers total on draft of our own."
Customers can also order food designed to be paired with their beer. They can take growlers to go and soon, crowlers.
She said, "We have a crowler machine which are the 32 ounce cans to go."
The name comes from this three-wheeled vehicle parked outside, that one of the owners bought at auction.
She said, "It's a three wheel little truck out there... we can drive it around. Technically, it has a motorcycle engine and I'm supposed to wear a helmet when I drive her, which is ridiculous but that's ok."
When the truck isn't parked outside the brewpub at Cave Springs and I-70 in St. Peters, you'll likely find it at festivals all over the area.
Abbey said, "It's fun to bring the good word of good beer out west."
