Easy Homemade Granola & Pomegranate Smoothie

Easy Homemade Granola

Ingredients

·         3 cup rolled oats

·         ½ cup wheat germ and/or ground flax

·         ¾ cup nuts (like slivered almonds)

·         ½ cup brown sugar

·         ½ cup Maple syrup

·         ¼ cup canola oil

·         1 tsp cinnamon

·         1 tsp salt

·         1 to 1 ½ cup dried fruit (raisins, apricots, cranberries, etc)

Directions

·         Preheat oven to 325 degrees F

·         Place oats, flax, and nuts, and brown sugar into a large bowl

·         Mix maple syrup, oil, and salt in a microwavable bowl

·         Microwave on high for 15 to 20 seconds

·         Pour liquid mixture over dry mixture and coat thoroughly

·         Spread onto parchment lined baking sheet

·         Bake for 20-30 minutes or until golden brown.  Be sure to stir every 5 to 10 minutes to assure even browning and baking.

·         Cool on parchment paper on a wire rack.

·         Once completely cooled, add dried fruit

·         Store in an air tight container

Place granola on top of low fat or fat free yogurt and top with desired fruit for a great breakfast treat or snack.

 

Pomegranate Smoothie

Makes 4(1 Cup) Servings

Ingredients

·         1 banana

·         2 cups (16 oz) fat free vanilla yogurt

·         1 Cup Pomegranate juice

·         1 tablespoon coarse sugar (optional)

Pomegranate seeds (optional)

Preparation

·         Wrap peeled banana in plastic wrap and freeze for 3 hours or until frozen

·         Unwrap banana, break into chunks and place in blender with the yogurt and juice.  Cover and blend until smooth; pour into 4 glasses to serve.  Top with pomegranate seeds if desired.
