Recipe: Bacon and Egg Breakfast Ring

In honor of the Olympic Winter Games, Kim Martin with the Missouri Egg Council has a recipe for a Bacon and Egg Breakfast Ring. This gold medal dish only needs five ingredients.

Bacon and Egg Breakfast Ring

Ingredients:

1 can flaky Grands biscuits

8 eggs, beaten

1 pound bacon, crisp-cooked and crumbled

1 (4 oz.) can chopped green chilies

2 cups shredded Cheddar cheese

Instructions:

Cut biscuits into eights. Combine all ingredients in a large bowl, and mix gently. Spoon the mixture into a well-greased Bundt pan. Bake at 350 degrees for 40 minutes, or until golden brown. Remove from oven and allow to cool for 10 minutes. Run a rubber spatula along outer edge of pan to loosen, then turn out onto a serving platter. Slice and serve warm.
