For the first time Linda Raymond is looking at the “Pasta House” Restaurant menu that features her name and her lasagna. She won a recipe contest with her white sauce lasagna.
While son Charlie and husband Chuck were confident, Linda had some competition in the first-ever pasta house recipe contest. 100 people entered and it was narrowed down to more than a dozen. The judges liked Linda's the best!
It's a simple recipe that starts with browning Italian sausage, onions, and garlic. After that simmers a bit, add fresh spinach which needs to be cooked until it wilts. Next start layering in the pan, using two different kinds of jars of alfredo sauce. The pasta noodles go on next, uncooked with a layer of the meat and spinach mixture on top. Linda then makes the cheese filling, which is a slightly beaten egg and a carton of low fat ricotta cheese. She drops it on top of the meat layer. She makes as many layers as the pan will hold and tops it with mozerella cheese and parsley.
Needless to say, the award-winning recipe has been a frequent meal around the Raymond household. The “Pasta House” prize includes a trip to Italy, which the Raymonds are taking this spring. For Linda, having a major restaurant serve your lasagna recipe is pretty exciting as well!
