Scott's Mom's "Old Virginia Applesauce Cake" Recipe


1 1/2 cups applesauce

1/2 cup shortening

2 cups sugar

1 egg (beaten)

2 1/2 cups all purpose flour

1/4 tsp. salt

1/2 tsp. cinnamon

1/2 tsp. allspice

1 cup raisins

1/2 cup nuts (black walnuts preferred by my mother)

2 tsp. baking soda

1 cup boiling water

Mix beaten egg, shortening, sugar, applesauce together.

Mix 1/2 cup flour with raisins to separate them, then add.

Mix remaining flour, salt, spices, nuts, baking soda and boiling water.

Pour mixture into a greased and floured cake mold.  Bake for 45 minutes at 350 degrees.

Reduce oven temperature to 300 degrees and bake for another 45 minutes.

Let cool for 25 minutes.
