Chef E shares black-eyed peas recipe

St. Louis (KSDK) - Chef E shares his recipe for New Years black-eyed peas

2 cups black eyed peas
4 cups broth
2 tbsp fresh garlic
1/2 cup onions
1/4 cup olive oil
Dash of hot sauce
2 tsp jalapeno juice
Juice from small smoked tomato (optional)
Pinch of thyme
1 sprig of fresh rosemary

Pick through the dry peas and remove the ugly ones
Cover overnight with cool water and 1/4 cup of baking soda
In a sauce pan, saute the onions and garlic in the olive oil
Add the peas to the pan and saute
Cover with broth or water and add remaining ingredients
Cook for 20 mins or until tender
