ST. LOUIS (KSDK) - Winter weather usually makes people long for warmth and comfort. And what better way to do both than to take-in a bowl of almost everyone's favorite food - Mac N' Cheese!
The owners of Twin Oak restaurant in Brentwood, Curt and Casey Friedrichs, have a more adult option that you can make at home. It's called 'C4'.
Recipe:
*1 Lb box of macaroni pasta (brand of choice)
*1 Cup Heavy Cream
*1 Cup Half and Half
*1 Cup Shredded Cheddar Cheese
*1 1/2 Cup Total Shredded Mozzarella Cheese (whole Milk, not the low fat kind)
(Use 1 cup in the sauce and save ½ cup to top the C4 with before you bake it)
*1 Cup Grated Parmesan Cheese (aged at least 12 months)
*1/2 Cup Goat Cheese
*2 Tbsp. Butter
*2 tsp salt
*1 tsp pepper
Instructions:
Preheat oven to 425
Boil noodles to al-dente state.
Combine all other ingredients into a saucepan and cook on medium heat until smooth and creamy.
Add noodles to sauce and stir to coat pasta, then portion into individual ramekins or into a casserole dish for baking. Top with the ½ reserved mozzarella cheese and bake in 425 oven for 10-15 minutes or until cheese on top is golden brown and bubbly.
