New restaurant hopes to help benefit local charities

St. Louis (KSDK) - What's soon to be the largest restaurant in the St. Louis area is scheduled for a grand opening on Thursday.  And the owners say they hope to have a successful business while also helping benefit the community.

BlackFinn will be located at the far north end of the Galleria.  While serving customers, it will also benefit several St. Louis-area charities including Backstoppers and Cardinal Glennon Hospital.

The menu features classic American cuisine and the head chef stopped by Today in St. Louis to share his meatloaf recipe. 

BACON WRAPPED MEATLOAF

INGREDIENTS
2 cups Diced red peppers
2 cups Diced yellow onions
2 tbsp Finely chopped garlic
1 tbsp Oil
1 ½ tsp Kosher salt
1 pinch Black pepper
3 lbs Ground beef
1 ¼ lbs Ground pork
¼ cup Soy sauce
¼ cup Heavy cream
3 Eggs
2 cups Bread crumbs
12-16 slices Bacon

COOKING METHOD
1. Preheat oven to 325 degrees
2. Sautee peppers, onions, and garlic with salt, pepper and oil for 10 minutes or until onions are translucent
3. Whisk together soy sauce, cream and eggs in a bowl
4. Add peppers/onion mixture, ground beef and sausage and mix all ingredients together
5. Portion mixture into 4-6 equal loafs
6. Place 2-3 bacon strips on cutting board, make sure that they slightly overlap
7. Place meat loaf on top of bacon and wrap the bacon around it
8. Place in loaf pan (make sure that the seam of the bacon faces down)
9. Place pan on middle shelf and bake for 25-30 minutes, until internal temperature reaches 165 degrees
10. Place meat loaf on cookie sheet or in oven pan and let cool for 10 minutes
11. Turn oven to 450 degrees
12. Place meat loaf back in oven and bake until bacon is crisp, be careful not to burn
