Strawberry Shortcake

1 shortcake biscuit

1.5 oz strawberry puree

6 oz sliced strawberries

(Optional) 1 scoop vanilla ice cream

1.5 c whipped cream

1 tsp. candied lemon zest

 

1. Cut biscuit in half lengthwise

2. Coat bottom of the biscuit with strawberry puree and top with the sliced strawberries

3. (Optional) Scoop ice cream directly on strawberries

4. Starting in the center of the sliced strawberries and working your way out, add 3 whipped cream rosettes

5. Add the lemon zest

6. Place the top of the biscuit on the dessert

 

 

Quinoa and Arugula Salad

1 c pre-cooked quinoa

2 portions arugula

1/2 oz red onions, sliced

1 Tbl sun-dried tomatoes

1/3 c blanched asparagus

1 1/2 fl. oz champagne vinaigrette

2 tsp toasted pine nuts

2 Tbl feta cheese crumbles

 

1. Toss all ingredients together, except the garnish

2.  Evenly distribute feta cheese crumbles over the salad
