Shrimp Bruschetta with Tomato Shallot Caper Relish and Ages Asiago Cheese

Ingredients:
12 each shrimp
12 each grilled baguette slice
12 ounces tomato shallot caper relish
1 ounce blend oil
1 teaspoon minced garlic
2 ounces white wine
2 ounces ages asiago

Directions
1. heat the oil to medium, add garlic and shrimp, cook 3-4 minutes on one side then turn, cook 2-3 mintes then add white wine and cook till almost dry

2. place shrimp on grilled baguette slices, top with tomato relish and garnish with grated asiago cheese

Tomato Shallot Caper Relish

Ingredients:
8 ounces tomato, julienned
2 ounces shallot, julienned
2 teaspoons garlic, minced
2 ounces basil, chiffonade
2 tablespoons capers
2 tablespoons olive oil
2 fluid ounces sherry vinegar
2 teaspoons sugar
salt and pepper

Directions:
Mix all ingredients and chill for one hour, then adjust seasonings if needed.
