Earth Day Dinner

Lavender and Honey Roasted Chicken

1 whole chicken, cut in to pieces

Salt and pepper

Marinade:

1/2 cup honey

2 tsp dried lavender

1 tbl dried thyme

1 tbl dried rosemary

1/4 cup balsamic vinegar

Preheat oven to 375 degrees. Season chicken with salt and pepper and place on baking sheet, in oven for 20 minutes. Remove baking sheet from the oven.

Combine marinade ingredients and baste chicken pieces. Put the tray of chicken back in the oven for approximately 20 additional minutes, basting the chicken every 5 minutes. Remove the tray from the oven when the thickest part of chicken reaches 165 degrees on a meat thermometer. Cover and let rest for 5 minutes before serving.


Vanilla Bean Vinaigrette

This light dressing is perfect for Spring and Summer. Add fruit for an additional burst of flavor.

2 vanilla beans (make sure it is pliable/supple), cut and seeded

2 tbl white wine vinegar

6 tablespoons vegetable oil

1/2 tsp ground white pepper

1/8 tsp salt

Make a lengthwise slit on each of the vanilla beans and open them up. With the side of the knife, scrape the seeds from the beans. Combine the seeds with the remaining vinaigrette ingredients until mixed together and drizzle over lettuce. I prefer bibb lettuce, with additional summer fruits such as strawberries and blueberries.
