Missouri Baptist Dietician Sherri Hoyt stopped by Today In St. Louis to show us how to make a healthy dip everyone in the family will love.

Lemon-Basil Edamame Hummus

Sweet edamame stand in for the usual garbanzos in this festive hummus that dishes up a triple shot of lemon! Serve with a colorful garden salad for a simple "Meatless Monday" entree!

1 10-12-ounce package shelled edamame, cooked according to package directions without adding salt
4 garlic cloves, chopped
3 tablespoons extra virgin olive oil
1 teaspoon grated lemon peel
3 tablespoons fresh lemon juice
1/2 teaspoon ground cumin
3 tablespoons water
1 tablespoon Dijon mustard
3/4 teaspoon salt-free lemon pepper
1/2 teaspoon coarse salt
3-4 tablespoons thinly sliced fresh basil leaves
Black and white sesame seeds (optional)

In food processor or blender, puree all ingredients (except basil and sesame seeds); adding additional water if necessary for desired consistency. Stir in basil. Transfer to serving bowl; cover and refrigerate 30 minutes to develop flavors. Sprinkle with sesame seeds, if desired. Serve with fresh vegetable dippers, whole grain crackers or pita wedges. Makes 12 servings (2 tablespoons each.)

Per serving: 63 Calories, 0 mg Cholesterol, 5 g Fat, 1 g Saturated Fat, 114 mg Sodium, 3 g Carbohydrate, 1 g Fiber, 3 g Protein.
