BEAST Butcher and Block opening in The Grove this weekend

ST. LOUIS – The BEAST Butcher and Block is opening in The Grove this weekend.

David Sandusky, pitmaster and owner of Belleville mainstay BEAST Craft BBQ, set the official opening date for his latest creation at 4156 Manchester for June 15.

Sandusky has secured BEAST Butcher and Block’s culinary team, which includes veteran and former Good Fortune chef and co-owner Ryan McDonald as executive chef, former Paddy O’s “BBQ Madman” CJ Baerman as butcher, and Kelvin Johnson, who previously worked with Sandusky, as sous chef.

BEAST Craft BBQ pit boss Jim Thomas will take his talents across the river and assume the same role at BEAST Butcher and Block. Sandusky will remain pitmaster for both restaurants, while restaurant Helen Beshel will lead the team as director of operations.

“The BEAST Butcher & Block concept is two years in the making, and for good reason. There are a lot of moving parts, but we’ve been able to build things the way we want them to be, rather than be held back by the building’s limitations – or anyone’s expectations. We’re not compromising. It’s all on our terms,” said Sandusky. “The extra time we’ve taken has allowed us to create something unique to barbeque in The Grove, and it gave us the perfect opportunity to hire an all-star culinary team. I have complete confidence and respect for them. We look forward to finally sharing BEAST with the people of St. Louis.”

There will be six large smokers at BEAST Butcher and Block. The 6,000 square-foot restaurant features a 95-seat main dining room and a patio with seating for 25. The property features interior and exterior murals created by Killer Napkins and other artisans, and has its own large parking lot. The restaurant will be open seven days a week, from 11 a.m. until 9 p.m. during the week, and 11 a.m. until 10 p.m. on Friday and Saturday.
