Shrimp and Pork Wontons


16 oz. peeled and deveined, roughly chopped, shrimp

16 oz. ground pork

3 oz. sliced green onions

3 oz. shiitake mushrooms chopped

1 oz. vegetable oil

4 oz. corn starch

2 oz. oyster sauce

1 oz. sesame oil

1 oz. minced ginger

I package thin wonton skins, yellow

4 whole eggs


Lay out six to eight wonton skins and set aside. Strain as much water from shrimp as possible. Mix the first 10 ingredients together and chill for one hour. In a small mixing bowl, beat together four eggs and one cup of water to make an egg wash. Brush the edges of the wonton skins with the egg wash.

Place 1 oz. shrimp and pork mixture in the center of each wonton skin and close the top of the wonton. Place the finished wontons on a sheet tray on the top of parchment paper, and wrap and freeze.

Szechuan Chili Sauce


8 oz. chili oil

2 oz. sweet soy sauce

2 oz. oyster sauce


Mix all ingredients together, then chill and reserve for use.

To Serve Szechuan Wontons


5 pc wonton

32 oz. lightly salted water

1 oz. slice green onions

1 oz. chop cilantro

1 oz. fried onions

3 oz. house chili sauce (recipe included above)


Bring a small pot of water to a simmer and drop the wontons into the water for five minutes. Remove the wontons from the water and drain for one minute. Place wontons in a serving bowl and add 1 oz. chili sauce on the top. Then garnish with sliced green onions, cilantro and fried onions
