Anthology is known for compassionate senior living

Anthology Senior Living offers their residents top notch dining and so much more.

ST. LOUIS — Anthology of Clayton View offers senior living options for both assisted living and memory care. Executive Chef Jason Goza and Regional Executive Chef Adam Shaw are here to highlight some of Anthology’s dining options.

Food is not always the first thing that comes to mind for senior living communities, but Adam explains that everything Anthology does is centered around their residents. They listen to what the residents have to say and try to have the most nutritional but eclectic, colorful, and upscale food as they can.

Jason and Adam show us their deviled eggs, an old school favorite. They also make pickled red onions with apple smoked bacon on top and show us an herb marinated chicken over fingerling potatoes, white wine braised fennel and baby carrots with an Italian peperonata sauce. Jason and Adam also share that they like to use spaghetti squash, one of the best vegetables for a diabetic to eat.

ST. LOUIS - INGREDIENTS: 1 pound Ground Beef (75% to 80% lean) 3 cups frozen potatoes O'Brien 1-1/2 cups prepared thick-and-chunky salsa 1 can (4 to 4-1/2 ounces) chopped green chilies 1/2 cup shredded Mexican cheese blend COOKING: Heat large nonstick skillet over medium heat until hot.

There is open dining from 7am-7pm for the residents, and they can come in whenever they want during that time.
