4 large russet potatoes

1 avocado, chopped

¼ cup Schnucks shredded mozzarella cheese

½ cup broccoli, steamed and chopped

¼ cup Greek yogurt

2 tbsp. chopped parsley

1 tbsp. Schnucks taco seasoning

  • Use a fork to poke holes in potatoes.
  • Microwave potatoes on high for 5 minutes. Flip potatoes and continue cooking until tender, about 5 additional minutes.
  • Cut potatoes in half and top with your favorite toppings. Finish with a sprinkle of taco seasoning (if desired).
