ST. LOUIS — Chocolate Milk Crepes

Crepes, a classic French pancake, can add variety to your breakfast routine.  Make them sweet, or make them savory, these crepes provide the right amount of protein to keep you going throughout your day. 

Yield: 8-10 crepes
Prep time: 5 minutes
Total time: 15 minutes

Ingredients:

  • 1 cup flour
  • 1½ Tbs cocoa powder
  • 2 eggs
  • 1½ cups low-fat chocolate milk
  • ½ cup water
  • ¼ teaspoon salt
  • 1 large banana, sliced
  • 2 cups vanilla Greek yogurt
  • Peanut butter drizzle, optional
  • Chocolate shavings, optional

Directions:

  • Whisk together flour, cocoa powder, and eggs in a large mixing bowl.  Add chocolate milk and water, stirring to combine.  Mix in salt and beat until smooth.
  • Heat a lightly oiled pan over medium-high heat.  Pour ¼-cup batter onto pan.  Tilt pan with a circular motion so batter coats the surface evenly.
  • Cook crepe until bottom is light brown and bubbles cover the top of the crepe – about 1 to 2 minutes.  Loosen with a spatula, turn and cook the other side.
  • Serve hot, filled with yogurt, and bananas.  Top with peanut butter drizzle and chocolate shavings.
