ST. LOUIS — Confetti Quiche Muffins
Makes about 22 muffins
Preheat oven to 325° and line muffin tins with papers or grease pan VERY well.
*You can also bake this in a baking dish or sheet pan simply adjust cooking time!
In a large bowl whisk together 6 eggs, 16 oz cottage cheese, 1 1/4 cup shredded mozzarella cheese, 4 oz beef crumbles or chopped vegan pepperoni chopped (optional), 1/2 cup prepared roasted vegetables or frozen, thawed vegetables (sautéed peppers and onions work well!), 1 teaspoon salt, 1/4 teaspoon pepper, and 1/2 teaspoon garlic powder. Pour into prepared muffins pans and bake for 40 minutes or until set.
Serve in optional pitas or tortillas with ketchup, salsa, guacamole etc.
