Recipe of the Day: Fried Green Tomatoes with lemony greens, burrata cheese and crispy prosciutto

ST. LOUIS — FRIED GREEN TOMATOES WITH LEMONY GREENS, BURRATA CHEESE AND CRISPY PROSCIUTTO

Ingredients:

2 TBS + 1 TSP Olive Oil

3 Green Tomatoes - Sliced thick

2 Burrata Cheese Balls - Cut in 4 pieces

10 Basil Leaves

1 BAG Baby Mixed Greens

1 Avocado

1 Lemon

1 TSP Coarse Salt

1/2 TSP Black Pepper

4oz Prosciutto - Cut into small pieces

Directions:

In a fry pan, heat 2 TBS Olive Oil.

Add Green Tomato slices and fry for about 5-10 minutes or until golden brown.

Remove and put on platter, sprinkle with half of salt.

Add Burrata Cheese Balls.

Fry Prosciutto pieces in same pan with remaining oil for about 1 minute.

Toss Greens in bowl with the fresh Basil, 1 TSP Olive Oil, juice from 1 Lemon and remaining Salt and Pepper.

Top Tomatoes and Burrata with Greens and Prosciutto.
