ST. LOUIS — “Get Your Own Tots” in honor of the 15th anniversary of Napoleon Dynamite:

2 1/2 lbs russet potatoes peeled

1/2 tsp chives dried

1/2 tsp dill dried

1/2 tsp onion powder

1/4 tsp garlic powder

1/2 tsp oregano fresh

1/2 cup parsley fresh (2 tsp for tot mix and reserve for garnish)

2 tbsp AP flour

1 1/2 tsp kosher salt

1/2 cup olive oil

Method: par boil potatoes about 7-8 minutes. Shock in ice bath. Shred potatoes with cheese trader and pat dry. Place oil in sauté pan and warm. In a large bowl mix all ingredients and place into piping bag. Must use immediately. Do not refrigerate mixture. On cutting board, pipe mixture and cut every 2 inches. Fry in oil till golden brown. Finish with cheese, prosciutto and parsley.
