ST. LOUIS — Revel Kitchen's Gluten-Free Paleo Cookies
4 cups almond flour
2 tablespoons coconut oil
2 tablespoons cocoa nibs
1 teaspoon pure vanilla extract
1/2 teaspoon salt
1 teaspoon baking soda
1 cup honey
Instructions:
1. Place all ingredients in a food processor or mixer and mix until a dough is formed.
2. Remove and mix in cocoa nibs by hand.
3. Portion dough into 12 even sized balls and then flatten out.
4. Bake at 325 F for 6 minutes.
