ST. LOUIS — HEIRLOOM TOMATO GAZPACHO
WHAT
4 heirloom tomatoes
1/2 cucumber
3 garlic cloves
1/2 green bell pepper
2-3 tbsp of EVOO
2-3 tbsp of balsamic reduction
2-3 pieces of toast or dry bread
Salt to taste
COLORFUL TOPPINGS
-Chopped colorful Tomatoes
-Chopped avocado
-Croutons
HOW
Add all ingredients to blender or food processor and blend until smooth. Refrigerate for at least 20 minutes or blend with a few ice cubes. Add toppings (if you wish) and enjoy cold!
