WASHINGTON, Mo. — Ingredients:

1/3 cup water

50 grams meringue powder

Juice of one medium sized lemon

2 tsp vanilla extract

2 TBSP corn syrup

2lbs powdered sugar

In the bowl of a stand mixer with the whisk attachment, whisk together the water and meringue powder until foamy. Add lemon juice and vanilla and mix for a few seconds. Add in half of the powdered sugar and mix on low until incorporated. Add the corn syrup and mix a few seconds. Add the rest of the powdered sugar and mix on low for a few seconds then increase speed and mix for 1-2 minutes until fluffy and the icing turns a brighter white color. Be careful not to over mix.
