ST. LOUIS — Light Chicken Salad

1/2 Cup Light Mayo

2 TBS Light Sour Cream

1/4 Cup Light Cool Whip

1/4 Cup Crushed Pineapple

1 LB Chicken Breast - Pulled or chopped into bite size pieces.

1/2 Cup chopped Celery

1/8 Cup chopped Green Onion

1/2 Cup Red Grapes sliced in half

Mix the Light Mayo, Light Sour Cream, Light Cool Whip and Crushed Pineapple together. Add the rest of the ingredients and mix completely.

Pair with some fresh fruit and you are good to go. We love it with cantaloupe, grapes and strawberries!
