Recipe: Southwest Spaghetti Squash Casserole

If you don't know what's for dinner tonight and want to save yourself from another trip to the drive-thru-- we've got an easy recipe for you. Assistant Professor of the Nutrition Program at SIUE, Kathy Mora, is here to show us how to make Southwest Spaghetti Squash Casserole.

Southwest Spaghetti Squash Casserole

Serves: 8-12

1 Lg. Spaghetti Squash

1 Can Corn

1 Can Black Beans

1 Can Diced Tomatoes

1 Cup Shredded Cheddar Cheese

Lime Juice

Cilantro

Southwest Seasoning

Directions:

1. Bake spaghetti squash, spread squash in baking pan.

2. In seperate bowl, mix corn, beans, tomotatoes together.

3. Pour mixture & spread evenly over squash.

4. Sprinkle southwest seasoning, lime juice, & spread cheese on top.

Bake 375 for 10 to 15 minutes in a 9x13" baking dish.
