Recipe of the Day: Whole Food Oatmeal Cookie Bars

Ellen Gipson and Laura Morton are the co-authors behind the new book, 'BLW Baby Food Cookbook: A Stage-by-Stage Approach to Baby-Led Weaning with Confidence.'

ST. LOUIS — Local dietitians Ellen Gipson and Laura Morton recently published a cookbook focused on baby food. The two of them stopped by Show Me St. Louis and shared a recipe from the book.

Whole Food Oatmeal Cookie Bars

An alternative to packaged snack bars using simple, whole food ingredients.

2 cups walnuts

1 1/2 cups pitted dates

1/2 cup oats

1 tablespoon coconut oil, plus more if needed

1 teaspoon cinnamon

1. Line and 8-by-8 inch square pan with parchment paper.

2. In a food processor, combine all ingredients. Pulse until a crumbly paste or ball forms. Test to see if mixture sticks together when squeezed.

3. Press mixture into pan and refrigerate until firm.

4. Slice into bites or bars.
