New fast-casual restaurant to open in Edwardsville

A fast-casual breakfast, brunch and tapas is coming to Edwardsville

Chelsea Coughlin is opening her own concept of a fast-casual breakfast, brunch and tapas restaurant in Edwardsville this week.

“The Obar food concept is taking the excess bread away from tasty and healthy food choices for people,” Coughlin said.

Obar is slated to open Saturday at 1516 Troy Road, Unit B, in the Montclaire Shopping Center. The 2,150-square-foot restaurant opens into a breezeway at the center that runs between Tot Spot Resale and Great Clips.

Dave Bailey will close Hugo's Pizzeria at 3135 Olive St. on May 19 following the sale of the building where Hugo's is located. Bailey owns the building and is selling it to a customer who mistakenly walked into Hugo's recently. "We did not have the property listed," Bailey said in a statement.

Coughlin said Obar will offer original egg recipes, including scrambles, an omelet bar and specialty omelets, along with protein muffins, her take on French toast and breakfast pizzas. Obar will serve fresh-squeezed orange juice and smoothies, as well as signature coffee and tea, infused with fresh fruits and herbs.

The restaurant will be open to the public for an “Eggstravagant Tasting” session Wednesday from 4 p.m. to 8 p.m. Beginning Saturday, Obar’s hours are 7 a.m. to 1:30 p.m. Monday through Saturday, plus 4-11 p.m. Thursday through Saturday, and 8 a.m. to 3 p.m. Sunday.

After a strong 2018, coffee and baked goods chain Dunkin' said it plans to open 50 new franchised locations across the country in the next few years, including seven in St. Louis. Franchisees Amit and Kalpesh Patel, and Michael Crouchi will open the seven restaurants throughout the St. Louis.

Tapas and alcoholic beverages will be available in the afternoons and evenings Thursday through Saturday.

Coughlin said she will have a staff of five to eight full- and part-time workers. She has a background in real estate investment as principal of CMC Investments & Development, and this is her first restaurant business.

Chicken Salad Chick, a southern-inspired chicken salad restaurant, is expanding in the St. Louis area with the addition of a second restaurant in Creve Coeur. The fast-casual eatery opened its first Missouri location in Chesterfield in January. The new restaurant, at 12536 Olive Blvd., will open its doors April 23.

She declined to disclose her investment in the venture but said it had cost “over a couple hundred thousand dollars” to renovate and build out the space. Coughlin is self-financing the project, with Providence Bank as a lender.

She said she has inked a three-to-five-year lease with center owner R.L. Jones Properties of Wildwood. Montclaire Shopping Center’s tenants also include Deal’s, Archview Flooring, and El Maguey and The Orient restaurants.

Obar will have outdoor seating and an event space, and will offer Wi-Fi and outlets so diners can power and recharge their devices.
