Sarah Schlafly is a local entrepreneur who uses crickets as the main ingredient in products. Her products include oatmeal, pancake mix, and protein powder.
She realizes many people may be grossed out by this concept, which is why she powders the crickets into her foods. That way, you can’t even tell you’re eating crickets!
Right now, the powder is at a premium price of 19.99 for half a pound. She hopes the price will drop when she opens her own cricket farm in Old North St. Louis.
