A quickly growing, Mexican fusion chain opens 1st St. Louis-area store. It's planning to add another.

Bubbakoo's Burritos recently opened its first St. Louis-area location and is already planning to add a second.

GLEN CARBON, Ill. — A quickly growing, New Jersey-based Mexican fusion chain recently opened its first location in the St. Louis region and is already looking to add a second.

Bubbakoo’s Burritos opened last month at 3901 S. State Route 157 in Glen Carbon, in what was previously a Mattress Firm store. The local franchisee is Pallav Patel, said Bubbakoo’s Director of Marketing Ben Grannick.

The South State Route 157 property is owned by Sunnyside Plaza LLC, an entity whose registered agent is Patel, and which purchased the property for $2.45 million last August, state and county records show.

Bubbakoo’s is known for its Mexican fusion cuisine — such as a burrito with General Tso's chicken or Nashville hot chicken — as well as its tacos, wings and bowls, and its bright green decor centered around a skater and surfer feel.
