ST. LOUIS — Chef Nick Bognar plans to launch a new dining concept to be co-located behind one of his existing restaurants.
Bognar announced Monday that he will add Pavilion, offering a so-called "omakase," or chef-driven, dining experience, in the back courtyard of Sado, the sushi-focused restaurant he opened last spring at 5201 Shaw Ave. in The Hill neighborhood.
Omakase is a Japanese phrase meaning “I leave the details up to you,” a dining style in which the sushi chef guides and prepares each dish in front of the diner, according to a news release.
The new Pavilion concept, set to open this spring, will offer guests a "ticketed" experience, served in a dining space and chef’s counter in a custom-built, glass-enclosed pavilion that will emulate a Japanese garden, according to a release.
