Frank’s Food Picks | Knockout BBQ truly is a knockout

Frank Cusumano stopped by Knockout BBQ for this week's food picks.

ST. LOUIS — One of the greatest success restaurant stories in our town is Dave Bailey. Almost everything he touches becomes a success. His latest cuisine is barbecue. Frank Cusumano loved it and made it his pick on Frank’s Food Picks.

I really don’t know how he does it. Dave Bailey has eight restaurants; my family can barely run one. Everyone is different. Everyone is good.

No. 8 is barbecue. It’s in the same building as Rooster on South Grand. You can barely get in to Rooster on a weekend morning and I imagine before long there will be a wait to get into Knockout BBQ.

Bailey is a perfectionist. He knows the business and he won’t do anything that is not perfect. He makes his own bread, grows his tomatoes and he cooks that meat for as long as 12 hours.
